Turn Leftover Potatoes into Yummy Bread

There’s actually two ways to do this, and I’ve done it both ways. You can pick and choose which option suits you best.

1. Use leftover mashed potatoes from the night before
If you haven’t totally laced your mashed potatoes with bacon, sour cream, and cheese {guilty!}, you can easily use it for this bread.


Scoop out 1 cup of potatoes for the recipe, and cut back on the salt entirely. Since you probably already salted the potatoes at last night’s meal, you really don’t need to do it again.

Even if you forget and salt twice, it’s not going to make that big of a difference. The bread still tastes really good…..just with a slightly saltier flavour.


2. Buy a box of potato flakesI know what you’re thinking….why on earth would a DIY girl go totally not when it comes to potatoes? Because I like to make this bread – a lot – and if I stood and peeled potatoes just to make homemade bread, it would take a very long time!

Buying a box of instant flakes is slightly more expensive, as shown in the graphic below. But at this point, time is money to me, especially if I don’t want to spend all day in the kitchen making potato bread.
I usually make the entire box, and freeze in 1 or 2 cup portions. I like to use ziploc bags, because they squish flat and save on space.

Then, when I want to whip up a batch of this bread, I don’t have to wait for leftover potatoes, or peel and cut my own for a special batch. I can just pull it from the freezer!



Now, if you found yourself having absolutely nothing to do, or were peeling potatoes for a dinner anyway, I could see peeling a few more for the bread. Since you have all the potatoes out and are doing a lot of the work already.

Also, if you have one lonely little potato leftover from the bag and it’s starting to going bad, making this bread would also be a good way to save it from going to waste. Too often have I been the culprit of throwing potatoes away because I forget that I had one or two of them still left.

So, next time you think potato bread is going to be a huge hassle to make, it really doesn’t have to be. You can use up your leftovers, or spend a couple hours stockpiling your freezer to quickly make this bread later.

And have I mentioned how yummy it is too? These loaves turn out so fluffy they melt in your mouth. Mmmm…so good.

Troubleshoot tip: If you want to use frozen mashed potatoes, make sure you thaw thoroughly and maybe even warm up a bit before you add it to the dough. You don’t want to hinder the rising process with cold potatoes!

Christening Dress


Step 1: Christening Dress Part 1

Difficulty: Intermediate
Size: Approximately 10 1/2" across the bodice, and the skirt is 22" long, with the bodice it is approximately 27" long. Newborn to 3 months.
Materials: I did this pattern in #10 cotton thread with a C hook. I wanted a dainty look and it worked out really well. It took about 2,000 yards. This dress is open and airy and the gown will require a slip underneath. I made this from a cloth pattern. You will also need 4 Small Buttons; Satin Ribbon and pearl beads (optional). 2.35 steel hook for sleeves.
Gauge: Bodice Pat -10 1/2 dc=2", 8 rows=2"
Abbreviations: Cl = Cluster--(yo, draw a long lp thru ch) twice, yo, draw thru 4 lps on hk, yo, draw thru rem 2 lps on hk. Dtr = Double Treble--(Yo) 3 times, insert hk in next st and draw a lp thru, (yo and draw a lp thru first 2 lps on hk) 4 times. Tr tr = Triple Treble--(Yo) 4 times, insert hk in next st and draw a lp thru, (yo and draw a lp thru first 2 lps on hk) 5 times. Gr = Group--* leaving last lp of each st on hk, work 1 dtr around post of ea of next 4 sts *, sk next sc, rep from * to * once more (there are 9 lps on hk), yo and draw thru all lps on hk, ch 1 to close.

Skirt: Worked in one piece to underarm, beg at lower edge. Ch 386.

Sl st in first st, sl st into first sp, ch 2, * dc in sp bet next 2 dc; rep from * across, end dc in sp bet last dc and turning ch.
Row 3: Ch 2, (dc in sp bet next 2 dc) 17 times, turn-18 sts.
Row 4: Ch 2, * dc in sp bet next 2 dc; rep from * across, end dc in sp bet last dc and turning ch.
Rep last row until piece measures 4" from division, end right side.

Shape Shoulder: Ch 1, sc in ea of next 3 sps, hdc in ea of next 6 sps, dc in ea sp across. Tie off.
Front: With right side facing, sk next 8 sps on division row and join yarn in next sp, ch 2, (dc in sp bet next 2 tr) 39 times, turn--40 sts.

Shape Neck: Ch 2, (dc in next sp) 13 times, turn.
Next Row: Sl st in first st and into first sp, ch 2, * dc in next sp; rep from * across, end dc in sp bet last dc and turning ch.
Next Row: Ch 2, * dc in next sp; rep from * to last sp, turn leaving last sp unworked.
Rep last 2 rows once more--10 sts.

Shape Shoulder: Ch 2, * hdc in ea of next 5 sps, sc in ea of next 4 sps. Tie off.
With right side facing, sk next 8 sps on last long row of front and join yarn in next sp, ch 2, work to end. Complete to correspond to first side, reversing shapings.

Step 4: Christening Dress Part 4Right Back: With right side facing, sk next 8 sps on division row and join yarn in next sp, ch 2, work to end. Complete to correspond to left back, reversing shapings.
Neckline: With wrong side of work facing, work 12 sc evenly from the top of the shoulder, then sc in each sc across, and 12 sc evenly up to the other shoulder. Ch 1, turn.
Sc in next 12 sc, skip 3 sc, in next sc (Cl, ch1) 4 times, Cl in same space, skip 3 sc, sc in last 12 sc, ch 1, turn

Sleeves: Using 2.35 steel hook.

Row 1: Dc in 8th ch from hook, *ch2, skip 2 ch, dc in next ch* repeat from * to * across = 36 spaces. Ch 3, Turn.
Row 2: 2 dc in each space and 1dc in each dc across. Turn.
Row 3: Sl in first 4 dc, ch 3, dc in space between each dc to last 4 dc, leave unworked, Turn.
Row 4: Repeat Row 3
Row 5-6: Ch 3, dc in space between each dc across, Turn.
Row 7-19: Repeat Row 3, ending with 18 dc on row 19. Fasten off.
With right sides facing, using small overcast stitches, sew Rows 1 and 2 tog for underarm seam. Gather sleeve cap to fit armhole and pin evenly in place with right sides facing. Overcast stitch in place.

Step 5: Christening Dress Part 5Sleeve Edging:
Round 1: With right side facing, join thread in underarm seam at lower edge of sleeve, ch 1, sc in same place as joining. ch 5, skip next space. *sc in next dc, ch 5, skip next space*, rep from * to * around, ending with ch 2, dc in first sc instead of last loop of 5 ch (36 loops).
Round 2:
Ch 1, *sc in loop, shell (shell is 8dc) in next loop, sc in next loop, ch 5* rep from * to * around, ending with ch 2, dc in first sc instead of last loop of 5 ch.
Round 3: Ch 1, *sc in ch 5 loop, dc in next dc, (picot, dc in next dc) 7 times* rep from * to * around. Fasten Off.
Picot is worked with ch 3, slip st in 1st ch

Finishing: I sewed 3mm pearls along the neckline to embellish. (optional).
Weave ribbon through spaces in sleeve between the sleeve and edging. Tie Bow.
Sew buttons evenly spaced on the back of the gown for closure.

At The End of Your Rope...


We often find ourselves at the end of our rope. We feel deserted, alone, like a failure, completely devastated by circumstances. When we find our selves in this position what should we do?
The children of Judah found themselves much in the same situation. They definitely felt deserted. They had left God and God was bringing judgement upon them if they would not return to him. Israel fell to Assyria. Judah enjoyed times of God’s blessing while they walked with Him.
The ministry of Zeph takes place in the city of Jerusalem around the time of King Josiah. Judgement was soon coming to Judah if they did not change their ways. Zephaniah sent a warning that Judgement was coming and that the people should repent, you could fairly say that they were at the end of their rope. He also told them that there is hope and that God would restore His people.
In chapter 3 we find the message of hope. Here God is using Zeph to remind the children of God that He has not forgotten them and that even though they will be punished for their sins, God will bring restoration to them. Even when we feel deserted, alone, at the end of our rope- Zeph’s message brings hope to us as well.

Zeph. 3:17
we must stop and realize that:

I. We are not alone, God is in our midst.
The promise to the Hebrews was that God would dwell among them and that He would be their God and they would be His people. They would enjoy times of blessing as they walked with Him and obeyed Him.
He protected them in the midst of the plagues of Egypt
He went before them and behind them as a cloud and fire while the people fled from Egypt
He conquered cities merely by having the people walk around it
This is only the tip of the iceberg of all of the things that God did for His children.
His promise was that “I will never leave you nor forsake you”
His message through Zeph is I am here. Even when you feel like I have left you alone I haven’t, I am here!

This message is for us today as well. The Lord your God is in your midst, The Mighty One will save.
Jesus promised that He would not leave us as orphans Jn. 14:18. Paul tells us that we are God’s temple with the Spirit of God living within us- I Cor. 3:16. His promise to never leave nor forsake carries through to us today- Heb. 13:5
We have the Spirit of the Lord within us if we are a believer. That means that God through His Spirit is present with us where ever we go, what ever we do. This should encourage us- we are not alone! This should also discourage us from making poor choices about what we will participate in- we are not alone!
When you feel abandoned- God is in your midst! When you think you are w/o hope-God is in your midst!
When you feel forsaken- God is in your midst! When you reach the end of your rope- God is in your midst!

When you reach the end of your rope let go- God is there and let Him handle it.

II. You are a treasure.
Isa. 65:19 “I will rejoice in Jerusalem, and joy in My people; the voice of weeping shall no longer be heard in her, nor the voice of crying.”
Even though the people of God had messed up and left God, He never left them. They were special to Him. They had value in His eyes. God went through great lengths to restore the Hebrew people. They are precious to Him. He continued to give them opportunities to come back to Him.

We too are special to God. We have value in His eyes.
I Cor. 6:20- you were bought at a price- the price of Jesus’ blood.
2 Cor. 4- we have treasure in earthen vessels- treasure of Jesus

God loves you; died for you; desires you; He will quiet you with his love;
Knowing the precious love of God should bring calm to our hearts. It should bring peace. In all of the anxiety of what is going on; knowing the love of God should quiet our hearts and calm us. Knowing that Jesus died on the cross for you and me should bring peace.
The Lord goes through great lengths to bring you to Him. His desire is for a genuine relationship with you. He has given His Son to make that possible.

III. He rejoices over you
Is. 62:5- as the bridegroom rejoices over His bride, so the Lord rejoices over His children.
Mt. 18- Parable of the lost sheep- seeks it, finds it, rejoices over it- just as God does for the one who returns home.
The story of the prodigal son- son left, returned, father rejoiced- fathers children are precious in His sight.
A mother quiets a crying baby by singing. The soft calm voice soothes the child and helps them to calm- God does the same for us- sings over us and quiets us w/ His singing.
God rejoices over me! God rejoices over you!

The Onion...


I was an onion before Christ set me free.
Layers upon layers of iniquity.
An ugly old onion whose fragrance was strong;
That my Jesus bought and loved all along.
Unknown to me what He was going to do.
Of what He was planning, I had not a clue.
Pulling each layer off one by one.
In order to make me more like Jesus the Son.
The first layer wasn’t so bad.
I saw all the sins that I knew I had.
They were easy to fix, just change the way I talk.
And learn more of how He wanted me to walk.
Reading His Word, and learning again;
How to put aside my life of sin.
But the next layer was pulled which hurt more.
He was getting closer to the core.
Unknown what He would find there.
I simply gave it to Him in prayer.
As another layer was removed, He started to cry;
Pulling this layer brought pain to my Father on High.
And I was crying over the sadness I felt;
The brokenness and all of the guilt.
Past memories that I thought were gone;
They were buried under layers disguised in a fragrance so strong.
As onions peel more and more;
And they put tears in our eyes as we get close to the core;
So my Father wept over my pain;
Giving me a balm of comfort and strength to sustain.
“No More Layers.” I would scream.
As He continued to peel them off of me.
“I’ll have nothing left my Lord, what will I do?
I’ll be nothing but a worthless core to you. “
But He just said “Trust me,” and continued to peel
I was sure He was blinded to my pain that was so real.
Year after year I shrunk more and more;
Until all that was left of this onion was a core.
It was then that I began to understand;
As the Lord embraced me in His loving hand.
He said, now and only now can you be;
The creation that will minister before me.
Clothed with the righteousness only from above;
Gone are your layers of self so you can be filled with my love.
He took my layers of sin, hurt and pain;
And clothed me with love, truth and mercy in His name.
Yes, we are all onions, learning with each day;
How to overcome as each layer is taken away.
Some layers tear and pull at our heart;
While others grieve us to our innermost part.
But we are nothing but an ugly onion without Christ.
Layers upon layers of pride, sin and strife.
Only God can take those layers away.
And clothe us with His righteousness in that final day.

Old Fashioned Banana Pie.....

Ingredients:
  • 2 1/2 - cups milk
  • 1/4 - cup heavy cream
  • 2 - egg yolks
  • 2/3 - cup sugar
  • 4 - tablespoons cornstarch
  • 2 - teaspoons vanilla extract
  • 2 - tablespoons butter, room temp
  • 1 - 2 ripe banana, sliced (not over ripe)
  • 1 - 9 inch pie shelled, baked (homemade or store bought)
  • 1 - 2 recipes meringue topping using meringue powder

Directions:
  1. Let's start by getting the pie crust prepared. You can prepare a homemade one crust recipe or use store bought pie crust.
  2. Prick the bottom and sides of your pie crust and bake until golden brown. Remove from oven and let cool while you prepare the filling. Whisk together the milk, cream, and egg yolks.
  3. Combine the sugar and the cornstarch in a heavy saucepan. Whisk in the milk mixture and cook over medium heat, stirring constantly for 5 minutes.
  4. After 5 minutes stir the mixture constantly until it comes to a boil , about 5-7 minutes. Boil and stir the mixture for one minute. Remove the saucepan from the heat and stir in the vanilla extract and butter.
  5. Let the filling cool down a bit before adding the sliced bananas. When cooled, add the sliced bananas and pour into the pie shell and smooth.
  6. Prepare the meringue topping and spread on top of the pudding mixture.
  7. Place under your ovens broiler for a couple minutes to brown the meringue topping. Make sure to watch carefully because it only takes a couple minutes.

Meringue Topping:
1 - 2 recipes meringue topping using meringue powder. Follow the directions on the back of the can of the Meringue Powder for Meringue Pies. I double the meringue recipe. It is the perfect amount for pies. The ingredients required will be meringue powder, sugar and water.

Chunky Adult Slippers

Learn how to crochet an adorable pair of Chunky Adult Slippers with this easy to follow tutorial. Single crochet is worked to the finishing touch. Add a button, a flower or even a pom pom to add a fun embellishment to your cute new slipper.

Crochet Hook: M/13 or 9 mm hook
Yarn Weight: (4) Medium Weight/Worsted Weight and Aran (16-20 stitches to 4 inches)
Materials: 
  • Worsted weight yarn, approx. 50 grams. 
  • Crochet Hook, size 9mm (US M) 
  • Yarn needle 
  • Optional: buttons, flower, pom-pom 
Instructions: Gauge 2 sc = 1 inch

Working with 2 strands of worsted weight yarn, and a size 9mm crochet hook: chain 2, make 9 double crochet in the 2nd stitch from the hook, slip stitch to join.

Chain 1 and turn, make 2 single crochet in each stitch around, slip stitch to join. (18 stitches)

Chain1 and turn, single crochet in each stitch around, slip stitch to join. (18 stitches)

Repeat step 3 until the slipper fits approximately 1/3 across your foot.

Begin the sides:

Chain 1 and turn, single crochet in each stitch across. Do not slip stitch to join.

Repeat step 5 until the work is long enough to reach to the back of the heel.

Fold the work in half, and slip stitch the heel end of the slipper closed.

Fasten off.

Weave all yarn ends into the finished work.

Note: The yarn end in the front of the slipper can be used to close up the hole.
OPTIONAL:
Sew a button, flower, or pom-pom on the slipper.


Trust in God...

Inspirational short story with moral : Trust in God

A man just got married and was returning home with his wife. They were crossing a lake in a boat, when suddenly a great storm arose. The man was a warrior, but the woman became very much afraid because it seemed almost hopeless:

The boat was small and the storm was really huge, and any moment they were going to be drowned. But the man sat silently, calm and quiet, as if nothing was happening.

The woman was trembling and she said, “Are you not afraid ?”. This may be our last moment of life! It doesn’t seem that we will be able to reach the other shore. Only some miracle can save us; otherwise death is certain. Are you not afraid? Are you mad or something? Are you a stone or something?
The man laughed and took the sword out of its sheath. The woman was even more puzzled: What he was doing? Then he brought the naked sword close to the woman’s neck, so close that just a small gap was there, it was almost touching her neck.

He said,” Are you afraid ?”

She started to laugh and said,” Why should I be afraid ?,If the sword is in your hands, why I should be afraid? I know you love me.
” He put the sword back and said, This is my answer”. I know God Loves me, and the storm is in His hands

SO WHATSOEVER IS GOING TO HAPPEN IS GOING TO BE GOOD. If we survive, good; if we don’t survive, good ,because everything is in His hands and He cannot do anything wrong.

Moral: Develop Trust. This is the trust which one needs to imbibe. and which is capable of transforming your whole life. Any less won’t do!

Crochet Newborn Baby Sleep Gown...



A basic knowledge of crochet and crochet terms is a must to work this pattern.

Materials:
Bernat Baby Softee [yarn used in pattern sample], approximately 6 ounces
F crochet hook, or hook to match gauge [for body]
E crochet hook [for ribbing]
Scissors
Large eye needle
Scrap yarn for marking rows
Optional: Ribbon for tie
Baby sew-on patch or decorative button

Gauge
Sc over 4”
18 sts
18 rows

Note: ch 1, turn at end of each row unless otherwise stated. Work all ends into row as you work, or weave them in when finished.

Stitches used:
single crochet [sc]
Slip stitch [sl st]
Seed stitch [also known as upside down stitch] - sc in first ch, double crochet in next ch, work across chain. Ch 1, turn. Classic Breakfast Casserole Recipe

Ingredients:
  • 12 eggs
  • 1 can evaporated milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 30 oz frozen hashbrowns, thawed
  • 2 cups shredded cheddar
  • 1 cup cubed ham

How to:
In a large bowl combine eggs, milk, salt, and pepper. Add thawed hashbrowns, shredded cheese, and ham. Pour into a greased 9x13 baking dish. Bake uncovered at 350 for 50 minutes or until center is set (you don't want uncooked eggs in the center).   Enjoy!

Traditional South African sago pudding

Satisfying Sago Pudding Recipe


Traditional South African sago pudding is warm and comforting; try this recipe

This warm winter pudding is a firm favourite, even in the hot Capetonian summer season.

Ingredients:
  • 1 cup sago
  • 1 litre milk
  • pinch salt
  • 2 tablespoons sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • butter
  • cinnamon | nutmeg

How to:
Boil sago, milk, salt and sugar. Add eggs, vanilla essence and more milk if necessary. Put into greased casserole dish, dot with butter, sprinkle cinnamon/nutmeg. Bake at 180 degrees for 20 -25 minutes.

Serve warm with cream, custard or ice-cream and enjoy!

Apple Cider Vinegar & its Magical Benefits...


Apple cider vinegar -- particularly the raw, organic, unfiltered kind -- is one of those undiscovered natural remedies. Some people call it magical, and say that regularly incorporating a small amount of the vinegar into your diet can result in copious health and beauty benefits. Some also use it topically on their skin to reap its benefits.

As apple cider vinegar is a natural substance, many feel better about ingesting it than manufactured chemicals, but of course, it must be done in moderation. While ACV has great benefits, it is an acid -- all vinegars are. Consume no more than a few teaspoons per day, and never drink it without diluting it with water or juice.

Tap into Your Inner Child

Have you ever watched children play outside? They explore every small rock, dig with their fingers through grass and dirt, run without a worry about time or purpose or direction.

Have you ever listened to children talk? They tell stories in animated tones, ask questions with wonder and curiosity, offer up fresh descriptions and details no adult would notice.

Writing from a child’s perspective pushes you to view the world differently and allows you to write freely—without doubt, without self-editing along the way. Although we have all been children earlier in our lives, it’s often difficult to capture that mindset again. Here’s how to tap into your inner child:

Child’s Play
Abandon the need to self-edit as you write. Resist hitting the backspace key. Let your inner child tell the story without interference from your adult judgments.

Play with your words. Make up new words, or use old ones in unique ways. Get creative with punctuation. Use humor—don’t be afraid to be silly.

Write with honesty. Yes, children learn to tell lies, but they are often brutally honest. They see a person or situation and speak without a filter. They are opinionated and ask questions.

Nurture an innocent spirit. Look at the world through new eyes, as if you’ve never seen your surroundings before. Just as children explore through touching and tasting, consider all the senses.

Find the complexity. Don’t be fooled—children are both simple and complex. While they don’t always understand the reason behind something or the consequences of their actions, they do sense conflict and tension. They pick up on emotions, tones, and moods.

What does your inner child sound like? What story does he or she want to tell?

PRACTICE
Write for fifteen minutes from a child’s perspective.

Feel free to use first or third-person point of view. What’s important is that you write freely, like a child—with humor, honesty, innocence, complexity.

This is interesting!! I knew you need your minimum water to flush the toxins out of your body, but this was news to me.

Drinking water at certain time maximizes it’s effectiveness on the body:

2 glasses of water after waking up – helps activate internal organs.
1 glass of water 30 minutes before a meal – helps digestion.

1 glass of water before taking a bath – helps lower blood pressure.

1 glass of water before going to bed – avoids stroke or heart attack.

Banana French Toast in a Mug...


French Toast in a Mug Recipe

Ingredients:
  • 2 slices whole wheat bread, cut in cubes
  • 1 egg
  • 4 tablespoons almond milk
  • 2 tablespoons applesauce
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • 1/2 banana, sliced
  • maple syrup

How to:
  1. Layer half the bread cubes in to a coffee mug. Top with 1/2 of the banana slices. Layer with the remaining bread cubes and top it of with the rest of the banana.
  2. In a small bowl whisk the egg, almond milk, applesauce, cinnamon and vanilla together. Pour over the top of bananas and bread. Place mug in microwave for 2 minutes on HIGH.
  3. Remove from microwave and top with syrup and enjoy!

God Knows You More Than You Know Yourself

                                                                    I am a daughter of God. And he knows me too well. He answers my prayers, helps me through my concerns, and gives me comfort when I need it. What a great blessing! A way I can communicate with my Father in Heaven is through sincere prayer. And when I come unto Him and express the feelings of my heart, He will grant unto me the things I stand in need of.
I was reading in the ensign this morning and came to a talk written by President Monson titled, "Come unto Him in Prayer and Faith." As I pondered on this message, it brought me so much peace and comfort. It reminded me of Jacob, the brother of Nephi, declared, "Look unto God with firmness of mind, and pray unto him with exceeding faith." (Jacob 3:1) I was reflecting back to my prayers and my faith. And Jacob’s advice has truly helped me as I go through the challenging times in my life.
President Monson says, "As we offer unto the Lord our family prayers and our personal prayers, let us do so with faith and trust in Him. Let us remember the injunction of Paul to the Hebrews:'For he that cometh to God must believe that he is, and that he is a rewarder of them that diligently seek him.'" (Hebrews 11:1) When we diligently seek God and come unto Him through sincere prayer and having great faith, we will be rewarded with many great blessings. Sometimes we may not want the answer to our prayers. And as much as we have prayed with faith, God knows what is best for us and will reward us with it. Elder Richard G. Scott gave a great counsel which answers that concern that we all have.
"With even your strongest faith, God will not always reward you immediately according to your desires. Rather, God will respond with what in His eternal plan is best for you, when it will yield the greatest advantage. Be thankful that sometimes God lets you struggle for a long time before that answer comes. That causes your faith to increase and your character to grow."
Wherever we may be, our Heavenly Father can hear and answer the prayer offered in faith. During those darkest moments of our lives, we often lose faith. And instead of praying for help in dealing with the situation, we pray for solutions to our problems. This past couple weeks I have been feeling just indifferent about some things. And this week I was encountered by a challenge that I never thought I would face. And through sincere prayers and putting my faith in the Lord, my prayers were answered. And even though the answer I received was not something I wanted, I know that God knows what is best for me. All I need to do is to continue in nourishing my faith by doing the small and simple things He has commanded me to do. He has poured His spirit upon me to give me peace and comfort. I know that God hears and answers prayers. He loves and cares for each and every one of us. And through our Savior, Jesus Christ we can be healed because He knows us more than we know yourselves!

My dear child, the day you see I'm getting old.......


“My dear girl, the day you see I’m getting old, I ask you to please be patient, but most of all, try to understand what I’m going through.

If when we talk, I repeat the same thing a thousand times, don’t interrupt to say: “You said the same thing a minute ago”… Just listen, please. Try to remember the times when you were little and I would read the same story night after night until you would fall asleep.

When I don’t want to take a bath, don’t be mad and don’t embarrass me. Remember when I had to run after you making excuses and trying to get you to take a shower when you were just a girl?

When you see how ignorant I am when it comes to new technology, give me the time to learn and don’t look at me that way… remember, honey, I patiently taught you how to do many things like eating appropriately, getting dressed, combing your hair and dealing with life’s issues every day… the day you see I’m getting old, I ask you to please be patient, but most of all, try to understand what I’m going through.

If I occasionally lose track of what we’re talking about, give me the time to remember, and if I can’t, don’t be nervous, impatient or arrogant. Just know in your heart that the most important thing for me is to be with you.

And when my old, tired legs don’t let me move as quickly as before, give me your hand the same way that I offered mine to you when you first walked.

When those days come, don’t feel sad… just be with me, and understand me while I get to the end of my life with love.

I’ll cherish and thank you for the gift of time and joy we shared. With a big smile and the huge love I’ve always had for you, I just want to say, I love you… my darling daughter.”

Baby Eggplants: The Cute Factor and how to....


Here are eight great ways to enjoy baby eggplant:

1. Make eggplant chips: 
Slice paper-thin, toss in olive oil and salt and bake at 350 for 15 to 20 minutes, turning once, until crisp.

2. Broil 'em: 
Thinly slice, brush with olive oil and broil until browned. Douse with fresh lemon juice, salt and pepper and sprinkle with finely chopped fresh mint or basil.

3. Stuff 'em: 
Cut off the tops and scoop out the flesh. Saute flesh with olive oil and shallots and transfer to a bowl. Add some bread crumbs, Parmesan cheese, parsley, egg, salt and crushed red pepper. Mix together and stuff eggplants. Bake at 350 for 20 to 25 minutes, or until tender.
4. Glaze 'em: 
Thinly slice and broil or grill until tender and brown. Drizzle with a warm balsamic-honey reduction and sprinkle with chopped fresh rosemary.
5. Saute 'em: 
Saute thin slices in olive oil until browned and tender. Toss with goat cheese, lemon zest, lemon juice, extra virgin olive oil, and mint.

6. Pickle 'em: 
Pickled eggplant is a unique addition to an antipasto platter. Check out these pickled eggplant recipes from Punk Domestics.
7. Grill 'em: 
Slice slightly thicker and brush with olive oil. Grill for 4 to 5 minutes per side, or until lightly charred. Serve with Romesco sauce or drizzle with a balsamic reduction.
8. Curry 'em: 
Cut into chunks and saute in olive oil with diced onions and chilies. Add Indian curry powder or other spices such as garam masala and turmeric. Add coconut milk and a thickening agent such as cornstarch, and cook until sauce is thickened. Serve over basmati or jasmine rice.

Asian Chicken and Baby Eggplant with Toasted Sesame Seeds and Cashews
Recipe:  (Makes 4 servings)

Chicken marinade:
  • 4 (1/2 -pound pieces) of boneless, skinless chicken breast (2 pounds total)
  • 3 tablespoons low-sodium soy sauce
  • Juice 1 lime
  • 1 tablespoon sesame oil
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped fresh cilantro
Rice:
  • 1 cup wild rice or brown rice
  • 2 1/2 cups water
Eggplant:
  • 10 to 12 baby eggplant, stems removed, and thinly sliced
  • 2 tablespoons sesame oil, divided
  • 2 scalions, thinly sliced
  • 1/4 cup chopped fresh cilantro, plus extra for garnish
  • 1 tablespoon lightly toasted sesame seeds
  • 2 tablespoons roasted unsalted (or salted, if you prefer) cashew halves
How to:
  1. In a large Ziploc bag or tightly closed container, add chicken and marinade ingredients and shake well. Refrigerate for a minimum of 2 hours or up to 6 hours. 
  2. Place rice and water in a medium pot and bring to a boil. Reduce to a simmer, partially cover and cook for 25 to 30 minutes or until the water is absorbed and the rice is cooked through yet still firm.
  3. Take chicken out of the refrigerator 20 minutes before cooking. In a large non-skillet over medium heat, warm 1 tablespoon sesame oil. Add the chicken. Cook for 4 minutes without touching. Flip and cook an additional 2 minutes. Add remaining 1 tablespoon sesame oil and eggplant slices. Cook for 4 to 5 minutes, or until the eggplant begins to soften and brown. Add the scallions and cilantro, and stir. Cook until the chicken is nicely browned all over and the eggplant is tender. Spread rice evenly on a serving dish and sprinkle with sesame seeds and cashews, and, if desired, chopped fresh cilantro.

Old-Fashioned Jam Fingers!

These jammy delights have been my forte for years...

This batch of Jam Fingers is just right with a leisurely Sunday afternoon cup of coffee:

Jam Fingers Recipe

Ingredients:
  • 120 grs butter (never margarine, people)
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 2 cups of cake flour
  • 2 tsps baking powder
  • 1 tsp mixed spice or cinnamon
  • apricot jam (or jam of your choice
How to:
  1. Beat together the butter, sugar, vanilla and egg (I used my processor to make the dough – so easy) 
  2. Mix together the flour, baking powder and spice, add to the processor, process to form a ball of dough 
  3. Press about two-thirds of the mixture into a greased baking tray or dish 
  4. Spread with apricot jam 
  5. Form the remaining dough into a ball and grate over the jam layer (use a fork to spread evenly) 
  6. Bake at 180°C until golden brown 
  7. Cut into ‘fingers’ while still hot, allow to cool in the pan. 
 ....grate the dough over the jam


 ....bake until golden brown


Any jam would be good in this recipe, one could make it more exotic by using something unusual  like fruit mince – yummy!
