If She Only Knew..........




Avert your eyes, Son.

His dad started saying it to him from the youngest age - when he was only a little boy. Might have been an alluring commercial while watching the ballgame. Or a billboard while driving down the highway. A pop-up on the computer screen.

As parents, we had purposed to teach him purity from the beginning.

And you wouldn't think that would be too tough to do where we live. We're out in the country, somewhere on the outskirts of a small western town. But that hardly matters anymore.

Temptation can be found anywhere.

Even in Target.

Target? Yeah, I know. That's what I thought too. Until one day we popped in to pick up some flip-flops for the summer and I remarked how he kept bumping into things.

What is your problem, Son??

"I'm just looking down, Mom," And with a nod, he indicated the ads placed strategically above us. Billboards for the lingerie department. Yikes. I'd not seen them.

But then again...I'm not a vulnerable young man either.

Sorry, Son.

I'm sorry the Enemy tries to pull you down everywhere you turn. I feel badly we live in a world that's so ready to compromise a man's commitment to clean living. It's never been easy - only it's far worse now.

Is there nowhere a young man can safely go?

Maybe a Christian family camp. You'd think.

It was a hot July day and we all packed up and headed out for fun and fellowship with a bunch of other believers. Picnic blankets, cold watermelon, and squirt guns. It was promising to be a great day.

So I was surprised to see our oldest son hanging back from the festivities. He's an outgoing guy and usually one of the first out there mixing it up. Except not this time. He stayed close to our small spot and played with his little brothers instead.

What is your problem, Son??

He hesitated for a moment. Then answered, "Mom, I don't know what to do. Dad's taught me to 'avert my eyes', but there doesn't seem anywhere I can turn here."

I glanced around and then saw what he meant.

Most of the ladies there were dressed for a hot summer day. Many with bare skin exposed. Lots of bareness. Yikes, again. Who would have thought he'd have to wrestle with it here?

I noticed a pretty girl nearby and wondered if she realized how difficult she was making it for a guy. Surely, she would have made another choice if she had. She might have thrown a light blouse on over her tank top. Slipped on a longer, breezy skirt. Picked out some walking shorts or a shirt with a higher neckline. She might have covered herself up.

If she only understood how hard he's trying to do the right thing. She might have dressed differently. For his sake. For the sake of all the men out there who want to walk in purity.

If she only knew that the way she dressed up meant a good man needed to look down. He had to turn away from her beauty. That he was missing out on her loveliness because she was showing him more than he was meant to see.

Because we can teach our sons to avert their eyes. To lower their gaze. But what can we do as Christian women? We can't leave our guys stuck in a place where there's nowhere left to turn.

Let's choose modesty - modesty that allows a woman's true beauty to shine through.

In like matter also, that the women adorn themselves in modest apparel, with propriety and moderation (I Tim. 2:9a).

Bacon & Egg Pie...


You will need:
  • 2 sheets of puff pastry, thawed
  • 2 tablespoons grape seed oil
  • 4 strips bacon, chopped
  • 6 eggs, beaten
  • 2 tablespoons fresh cream
  • 1 tablespoon parsley, finely chopped (optional)
  • sea ​​salt
  • coarsely ground black pepper
How to:
Roll out 1 sheet of dough slightly thinner and line the bottom and sides of a medium springform pan with it. Place wax paper on pastry, fill with rice and bake in oven at 180 ˚ C for 10 minutes. Remove rice and paper and bake for a further 10 minutes and then let cool. Arrange bacon on bottom. Mix cream, eggs and parsley, season lightly with salt and pepper and pour over bacon. Roll out the remaining dough slightly thinner and cut a circle large enough to cover the pan. Place over filling and press firmly against sides. Bake in an oven at 180 ˚ C for 30 minutes or until lightly browned. Serve at room temperature.

Cherry and Chocolate Stracciatella Ice Cream


Ingredients:
  • 1 cup cherries (pitted and chopped)
  • 1/2 cups sugar
  • 1 cup heavy cream
  • 1 cup milk
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate
Directions:
  1. Heat the cherries and sugar in a small sauce pan until the sugar is dissolved and the cherries are tender, about 10 minutes.
  2. Heat the cream and milk in a sauce pan until it almost boils, about 5 minutes.
  3. Reduce the heat to low.
  4. Add one tablespoon of the cream mixture to the eggs to temper them.
  5. Add the egg mixture to the sauce pan.
  6. Cook at low heat until it thickens and can coat the back of a spoon.
  7. Remove from the heat and stir in the cherries and vanilla extract.
  8. Chill the mixture in the fridge.
  9. Start freezing according to the instructions for your ice cream machine.
  10. When the ice cream is almost done melt the chocolate and pour it into the ice cream in a thin stream.

The God Who Makes Things Happen


“You’re the God who makes things happen; you showed everyone what you can do — You pulled your people out of the worst kind of trouble, rescued the children of Jacob and Joseph.” (Psa 77:14-15, The Message)

The great epic event of the Old Testament was the Exodus — the day God delivered His people out of bondage in Egypt. They were in the worst kind of trouble, and God brought them out of it.

They were up against the impassable Red Sea, and God brought them through it on dry ground. He made a way where there was no way. The armies of Pharaoh were pressing down upon them, but they escaped — while the horse and the rider were drowned in the sea.

God is the same yesterday, today, and tomorrow. The things that were written in ancient times are alive and relevant for us today. We are filled with hope in our times of difficulty as we gaze back upon what God has done in the past for His people.

And we know that even unto this very day, He is the God who makes things happen. He will make a way where there seems to be no way possible.

So when the trouble comes, then know that Deliverance is also on the way. We serve the God who makes things happen!

Eggs Benedict and Quick Hollandaise Sauce......



Eggs Benedict Recipe
You will need:

  • 3/4 cup Hollandaise Sauce (recipe follows) 
  • 3 English muffins 
  • 6 small slices of ham 
  • 6 eggs 
How to:
Prepare the Hollandaise sauce using the recipe below.
To cook the other ingredients: 
Halve each English muffin and toast all six halves. Warm the ham slices in a frying pan. Poach the eggs.
To assemble the dish: 
Lay one slice of ham on top of each English muffin half. Top with a poached egg and slather with Hollandaise sauce.


Quick Hollandaise Sauce
You will need:
  • 1/2 cup of butter 
  • 3 egg yolks 
  • 2 tbsp lemon juice 
  • 1/4 teaspoon salt 
  • Tabasco sauce to taste (5 or 10 drops is good) 

How to:
Melt the butter and heat to bubbling. Put everything else in a blender, cover and whip. Pour the hot butter through the opening in the top. Stop as soon as you’ve added all the butter.

Diabetic Friendly Raspberry Peach Delight


You will need:
  • 1 -prepared 8-in angel food cake cut into 1-in cubes (SUGAR FREE)
  • 1-.3 oz pkg.. of sugar-free raspberry Jell-O
  • 1 cup boiling water
  • 1 cup cold water
  • 1-16oz can light peach slices
  • 3 cups fat free milk
  • 1-1.5oz pkg. sugar-free vanilla pudding
  • 1-8oz. carton of light or fat free Cool Whip (I use the free)
How to:
Arrange cake cubes on the bottom of a 9x13 pan.
Dissolve jello in boiling water then stir in cold water.
Pour Jell-O over cake.
Arrange peaches over Jell-O.
Mix together milk and pudding; spread over peaches.
Top with Cool Whip (SUGAR FREE).

Speechless

Our dads always mad
He screams and he yells
I don’t think he likes us
It's easy to tell

Mums only kind
When dad's not around
And when he is home
She hardly makes a sound

Mums always out,
Never home
Dad's always drunk,
And always alone

As soon as we hear
Those jingly keys
We run and hide
We run and plea

We find a place
And curl up tight
I hold her hand
And she holds mine

And soon enough
Dad then walks in
Don’t make a sound, don’t say a word
I pray inside, deep within

But Leigh, she cannot help herself
For the pain is just too much
"O-God" she yells"
Why are you so mean?"

He doesn't like what she has said
And beats her even more
And with one last hit
Hard and strong, he pulls away and watches

She takes one last Gasp of air
Our hands still holding
Then falls to the ground where I sat
And doesn't move a muscle

I stare at him

French Onion Tart


You will need:
  • 1 pack of ready-made ​​puff pastry dough
  • 4 onions
  • 1 tablespoon butter
  • 200g Gruyére
  • few sprigs of fresh thyme
  • 1 egg
How to:City-bought puff pastry on a baking sheet and cut off the excess dough. Prick with a fork. Cut around the edge of the dough lightly with a knife about 1cm from the side. Place the butter and sliced ​​onions in a pan on very low heat for between 45 minutes and an hour until the onions gekarimaliseer. Divide the dough into 3 parts lengthwise and place two rows of filling in two of the thirds. Cutting cheese with a vegetable skiller and place on top of the filling with fresh thyme. Healthy Spinach Dip

SO glad I found this! I could eat this stuff for breakfast, lunch and dinner! YUM! 

Everyone has someone in their family who doesn't like to eat anything they think is “healthy.” That’s why I have to be super creative with my recipes, and secretive when I use cottage cheese.

Just a general trick, substituting cottage cheese for sour cream reduces that fat and adds a ton of protein to a meal. Just be sure to first blend the cottage cheese and no one will be able to tell the difference.

Spinach Dip RecipeIngredients needed:
  • 1 10 oz container of frozen chopped spinach – defrost and squeeze out all the juice
  • 1-2 5 oz cans of sliced water chestnuts – dice into small pieces
  • 1 8 oz container of 1% cottage cheese – blend with a handheld blender or in a traditional blender until smooth and creamy
  • 1 packet ranch dressing
After completing the above tasks, mix well, eat, and enjoy!
No baking or cooking needed.

Marshmallow "ricies"...



Ingredients:

  • 30 ml gelatine
  • 125 ml cold water
  • 420 grams castor sugar
  • 125 ml boiling water
  • 10 ml vanilla extract
  • 1 drop red food colouring, and blue
  • 2 litres puffed rice cereal
How to:
Soak gelatine in cold water and heat slowly over a pot of water until dissolved.
Add castor sugar, boiling water and vanilla and whisk for 7-10 minutes or until thick and glossy.
Stir in a few drops of food colouring until desired colour is reached.
Fold puffed rice through mixture and spoon into a couple of 2L ice cream containers.
Set for a few hours. Slice into squares or cut into shapes with cookie cutters.

Okay, is it time for you to heal yet? I sure hope so. I don’t know about you but those words above “I AM HEALED” “THANK YOU JESUS” are coming out of my mouth RIGHT THIS VERY MOMENT! What about you? Jesus can and WILL heal you but you MUST ALLOW HIM to do HIS WORK in HIS TIME. HE WILL KEEP HIS PROMISE. For those who aren’t convinced and you require it in writing, HERE YOU GO:

(Exodus 15:26 NKJV), “If you diligently heed the voice of the LORD your God and do what is right in His sight, give ear to His commandments and keep all His statutes, I will put none of the diseases on you which I have brought on the Egyptians. For I am the LORD who heals you.”

(Deuteronomy 32:39 NKJV) ‘Now see that I, even I, am He, And there is no God besides Me; I kill and I make alive; I wound and I heal; Nor is there any who can deliver from My hand.’

(Psalms 107:20 NKJV) He sent His word and healed them, And delivered them from their destruction.

(Proverbs 4:20-22 NKJV) My son, give attention to my words; Incline your ear to my sayings. {21} Do not let them depart from your eyes; Keep them in the midst of your heart; {22} For they are life to those who find them, And health to all their flesh.

(Isaiah 58:8 NKJV) Then your light shall break forth like the morning, Your healing shall spring forth speedily, And your righteousness shall go before you; The glory of the LORD shall be your rear guard.

Oh and just in case that wasn’t clear enough -

Bleeding Hearts


Ingredients:
  • ½ cup butter
  • ½ cup caster sugar
  • 2 eggs
  • 100g chocolate
  • ½ cup flour
  • 1 tsp vanilla extract
  • 1 small red chilli

How to:
Preheat oven to 180 ˚ C. Cream butter and sugar with a fork. Add 2 eggs, one at a time. Add flour and stir well. In a glass bowl, melt chocolate over a pot of boiling water. Cut red pepper very fine and place in melted chocolate once. Let chocolate cool slightly and add to dough. Create heart-shaped silicone pan. Place pan on a baking sheet and place in the oven for 5-7 minutes until the outside is cooked but the inside is still a little raw. Remove from the oven and let it stand for 1 minute. Remove from pan and sprinkle with icing sugar through a small tea strainer.

Lemon Icebox Pie


A favourite in the South, especially as a coolant after barbecue or hot chicken, lemon icebox pie is a tongue-teasing balance of sweet and tart. 
Note that this pie, once assembled, needs several hours to chill before being served.

Ingredients:

  • 3 egg whites
  • dash cream of tartar
  • 1 cup sugar
  • 1/3 cup lemon juice
  • 1 tablespoon grated lemon peel
  • 1-1/2 cups whipping cream
  • 1 baked & cooled 9-inch pie shell or Graham cracker crust

How to:
Whip egg whites with cream of tartar until frothy, slowly adding sugar until soft peaks form. Still whipping, slowly add the lemon juice, then the peel. 
The mixture will deflate a bit as you do this: don't worry!
In a separate bowl, whip the cream. Fold it into the lemon mixture and spoon it into the prepared pie shell. Freeze at least 3 hours or up to 3 days.
Remove from freezer about an hour before serving. Slices should be cold but not frozen solid.
The pie is safe with not cooking the eggs as the citrus from the eggs cooks them.

30 Ways to Reduce Stress...


1. Pray all the time, asking and thanking. 

2. Go to bed on time. 

3. Get up on time so you can start the day unrushed. 

4. Say No, to projects that won't fit into your schedule, or that will compromise your mental health. 

5. Delegate tasks to capable others. 

6. Simplify and unclutter your life. Less is more. (The one is often not enough, two are often too many.) 

7. Allow extra time to do things and get to places. 

8. Pace yourself. Spread out big changes and difficult projects; don't lump hard things together. 

9. Take one day at a time.

10. Separate worries from concerns. If a situation is a concern, find out what God would have you do and let go of the anxiety. If you can't do anything about a situation, forget it. 

11. Live within your budget; don't use credit cards for ordinary purchases. 

12. Have backups; an extra car key in your wallet, an extra house key buried in the garden, extra stamps, etc., 

13. K.M.S. (Keep Mouth Shut). This single piece of advice -Talk less; listen more-can prevent enormous trouble. 14. Do something for/with a child often...everyday if possible.

15. Carry a Bible with you to read while waiting in line. 

16. Get enough exercise. 

17. Eat right. 

18. Get organized so everything has its place. 

19. Listen to a tape while driving that can help improve your thoughts/life. 

20. Write thoughts and inspirations down. 

21. Every day, find time to be alone. ( a MUST DO)

22. Having problems? Talk to God on the spot, nip small problems in the bud. Don't wait 'til bed to pray. 

23. Make friends with Godly people. 

24. Keep a folder of favorite scriptures on hand. 

25. Laugh. Laugh some more! Take your work seriously, but not yourself ,

26. Develop a forgiving attitude (most people are doing the best they can). 

27. Be kind to unkind people (they probably need it the most). 

28. Sit on your ego. 

29. Slow down. 

30. Remind yourself that you are not the general manager of the universe.

Every night before bed, think of one thing you're grateful for that you've never been grateful for before. 

Remember that the shortest bridge between despair and hope is often a good "Thank you, Jesus!"

A Child’s Prayer...


A CHILD’S PRAYER



Dear God, are You still awake?  Have You got a minute or two?
You’re pretty good at understanding, And I really need to talk to You.

You see, Mommy came to tuck me in, Like she does every night.
I was trying to play a trick on her, Since she can’t see without the light.

I was going to close my eyes and pretend to be asleep.
But when I heard her crying, I didn’t dare let out a peep.

She started talking to you, God.  Did You hear the things she said?
Could You hear what she was saying as she stood beside my bed?

Why would Mommy be so sad?  I wondered just what I had done,
and then I began to remember it all as she named them one by one…

This morning we worked in the garden, but, honest, I really didn’t know
that if I picked all those little yellow blooms the tomatoes wouldn’t grow!

Charlie and I were trying to be helpers, ‘cause I know that’s what Mommy needs,
But I don’t think she was too happy with us when we pulled up carrots instead of weeds.

Mommy said we should stop for the day, she decided we had helped quite enough.
I sure had worked up an appetite…I didn’t know gardening was so tough!

We had peanut-butter and jelly for lunch and I shared too much, I guess…
But I didn’t realize until I was done that Charlie had made such a mess.

Mommy said she needed a nap, she had one of her headaches today.
She told me to keep an eye on my sister and find something quiet to play.

Well, God, do You remember all those curls you gave my little sister Jenny?
We played barber shop…very quietly…and now, well, she doesn’t have any.

Boy, was Mommy mad at me…I had to go sit on my bed.
She said never to cut “people hair” again.  I guess I’ll practice on Charlie instead.

We sat and watched poor old Albert, I just knew he must be so bored
Going round and round in the same place all day, wouldn’t You think so, Lord ?

I didn’t think it would hurt to let him out for a while.  I mean, mice need exercise, too.  
By the way, have You seen Albert lately?  He’s been sort of missing since two.

Mommy sent us outside for the rest of the day.  She said we needed fresh air.
But when Daddy came home she told him she was trying to get something out of her hair.

We thought Mommy needed cheering up, so we decided to brighten her day.
But, God, did You see the look on her face when we gave her that pretty bouquet ?

We had gotten a little bit dirty, so Mommy said to get in the tub.
“Use soap this time,” she reminded, “and please don’t forget to scrub.”

Charlie didn’t like the water too much, but I lathered up real good.
I knew Mommy would be so proud of me for cleaning up like I should.

I went downstairs to the table, but during dinner it started to rain…
I’d forgotten to turn off the water, it seems, and I hadn’t unplugged the drain !

I decided right then it was just about time to start getting ready for bed,
When Mommy said, “It’s sure been a long day.” And her face began turning all red.

I lay there listening to Mommy as she told You about our day.
I thought about all of the things I had done and I wondered what I should say.

I was just about to tell her that I’d been awake all along,
and ask her to please forgive me for all of those thing I’d done wrong.

When suddenly, I heard her whisper, “God, forgive me for today…
For not being more understanding when those problems came my way…

For not handling situations in the way you wanted me to…for getting angry
and losing my temper, things I know You don’t want me to do.

And, God, please give me more patience, help me make it through another day,
I’ll do better tomorrow, I promise.  In Jesus’ name I pray.”

Wiping her eyes, she kissed me and knelt here beside my bed.
She stroked my hair for a little while…”  I love you, precious,” Mommy said.

She left the room without ever knowing that I’d been awake all the time.
And God, could we make it our little secret? You know, just Yours and mine?

I’m sorry I was so much trouble today, I really didn’t mean to be…
Daddy says it’s tough being a kid sometimes, but I think it’s harder on Mommy than me.

Well, goodnight, God. Thanks for listening.  It’s sure nice to know You’re there.
I feel so much better when I talk to You ’cause You always hear my prayer.

And I’ll do better tomorrow, I promise…Just You wait and see!
I’ll try not to be so much trouble again, But, God, please give more patience to Mommy
…. Just in case !

Honey Bun Cake...


Ingredients:
  • 1 box Betty Crocker® SuperMoist® yellow cake mix
  • 2/3 cup vegetable oil
  • 4 eggs
  • 1 container (8 oz) sour cream (1 cup)
  • 1 cup packed brown sugar
  • 1/3 cup chopped pecans
  • 2 teaspoons ground cinnamon
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla
How to:
Heat oven to 350°F (325°F for dark or nonstick pan). Grease and lightly flour 13x9-inch pan, or spray with baking spray with flour.
In large bowl, beat cake mix, oil, eggs and sour cream with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Spread half of the batter in pan.
In small bowl, stir together brown sugar, pecans and cinnamon; sprinkle over batter in pan. Carefully spread remaining batter evenly over pecan mixture.
Bake 44 to 48 minutes or until deep golden brown. In another small bowl, stir powdered sugar, milk and vanilla until thin enough to spread. Prick surface of warm cake several times with fork. Spread powdered sugar mixture over cake. Cool completely, about 1 hour. Store covered.
Makes 12 servings

Whiskey & Citrus Trifle...


Ingredients:
  • 6 to 8 glass bowls
  • rich and easy fruit cake
  • thick, thick custard
  • handful of toasted almond slices
  • zest of 1 orange or tangerine
  • whiskey
How to:Place a slice of fruit cake in each individual glass bowl. Spoon custard. Sprinkle with almonds and peel. Repeat process. Throw tot of whiskey in bottom of glass and serve.

You need custard:
(Thick, thick custard)
  • 2 cups milk
  • 1 tsp vanilla extract
  • ½ cup sugar
  • 6 egg yolks
  • 2 tsp cornflour
How to:
Heat the milk, vanilla and sugar in a saucepan. Stir until sugar dissolves. Remove from heat and let cool slightly. Beat eggs in mixing bowl. Mix cornstarch with 2 tablespoons of milk in a separate bowl. Beat in eggs. Whisk 2 tablespoons of slightly cooled milk eggs. Beat egg mixture into milk in a saucepan. Stir with wire whisk over medium heat until custard begins to thicken. Remove from heat and pour through sieve.
