Step-by-step "Hawaiian Bread" Pudding...

Bread pudding out of “Hawaiian Bread” one of the best things I have ever made, not to mention easy! If you love Hawaiian bread, you will definitely love this dessert. And bonus, there is Hawaiian bread and pineapple in it so it also qualifies as breakfast!

Ingredients

  • 1 loaf of Hawaiian bread cut into bite sized cubes (see Hawaiian bread recipe below, especially for you...)
  • 2 cups pineapple cut into bite sized chunks
  • 1 cup sweetened coconut flakes
  • 2 cups heavy cream
  • 1 ¼ cups white chocolate chips
  • 1 ½ cups white sugar
  • 2 cups milk
  • 2 eggs, beaten
  • 3 egg yolks, beaten
  • 2 teaspoons vanilla extract
Directions

  1. Cut the bread and pineapple into bite sized cubes and add to the  9×13 pan. In a saucepan heat the cream over medium heat. 
  2. Meanwhile put the chocolate chips into a medium sized bowl. 
  3. Once the heavy cream begins to simmer remove it from the heat and pour over the white chocolate chips. 
  4. Whisk the white chocolate and the heavy cream until the chocolate is melted. Add the sugar, milk, eggs, egg yolks and vanilla and whisk. Pour the mixture over the bread and pineapple. Sprinkle with the coconut. 
  5. Allow the bread pudding to sit for 1 hour and then bake for 45 minutes in a 350 degree oven. If it is getting too brown cover the bread pudding with foil.

Add the bread and the pineapple to a 9x13 inch pan

Heat the heavy cream and remove from heat once it begins to simmer

Pour over the white chocolate chips

Keep whisking until the white chocolate is melted

Beat the eggs and add to the white chocolate mix

Add the sugar, milk, and vanilla and whisk well

Pour over the bread and pineapple and sprinkle with coconut

The only thing better would be eating this in Hawaii!


Here is your Hawaiian Bread Recipe....
You will absolutely love this bread, whip it up yourself! It does take a while...but so worth it!


Ingredients: (3 loaves)
  • 6 cups all-purpose flour , plus
  • 1/2 cup flour
  • eggs
  • 2 cups pineapple juice
  • 3/4 cup sugar
  • 1/2 teaspoon ginger
  • 1 teaspoon vanilla
  • 2 (1/4 ounce) envelopes yeast
  • 1/2 cup butter (one stick) or 1/2 cup margarine , melted (one stick)
Directions:

  1. Beat the eggs. Add the pineapple juice, sugar, ginger, vanilla, and butter.
  2. Place 3 cups of flour in a large bowl. Stir in the egg mixture until well-combined. Sprinkle in the yeast, one packet at a time, and mix.
  3. Add the remaining 3 cups of flour and mix in . Blending with a spoon will be hard, so you may have to use your hands. Make sure it is thoroughly combined. Cover the bowl with a cloth and set in a warm place to rise for 1 hour.
  4. Remove from the bowl and knead in 1/2 cup flour. Knead about 10 times. 
  5. Divide into three equal parts.
  6. Place in greased and floured loaf pans or shape into rolls. Cover and place in a warm place to rise for 1 hour.
  7. Bake at 350 degrees for 25-30 minutes or golden brown.
