Cucumber ribbon salad with dill...


This is just a quick salad I threw together to go with the sloppy joes. I love how light it is, and with the cucumber sliced in ribbons, it’s much more tender than a regular cucumber salad—it almost provides the same satisfaction as eating a bowl of pasta
.

Ingredients for cucumber ribbon salad:

  • 1 English cucumber
  • 2 tablespoons rice vinegar
  • 3 tablespoons Vegenaise
  • pinch kosher salt
  • 3 teaspoons sugar
  • 1/4 teaspoon dry dill (or 2 teaspoons fresh dill)
Slice the cucumber longways with a vegetable peeler to create long, wide ribbons. Whisk remaining ingredients in a medium bowl, and add in the cucumber. Toss to coat and garnish with chopped chives, if desired.
