How to make Soft & Crumbly Peach Cookies...
Ingredients: (Serving size: 50 units)
6 cups Flour
2 1/2 cups Unsalted Butter
1 1/2 cups Sugar
4 Eggs
2 teaspoons Vanilla
1 tablespoon Baking Powder
16 ounces Dulce De Leche; filling
1/2 cups roasted crushed Walnuts; filling
1/2 cups Cookie Crumbs; filling
2 cups Sugar; topping
2 drops Pink Food Coloring; topping
1 drop Green Food Coloring; topping
2 cups Milk; topping
Instructions: Step 1 First, mix butter, eggs, sugar and vanilla. To the mixture, add flour together with baking powder. Mix until all ingredients are well combined. Step 2 Preheat oven to 350F. Line baking sheets with parchment paper. Make small, round balls, the size of a small-ish walnut. Arrange them on a baking sheet, about an inch apart, and bake for about 15-20 minutes. They should still remain white. Step 3 Cut out a small hole in the center of each cookie. Fill in each hole with filling. Press the two sides together. FILLING: Step 1 Combine dulce de leche, together with cookie crumbs and crushed walnuts.
DECORATEStep 1 Pour a cup of milk into each of the two bowls. Color milk in each bowl, pink and peach, using food coloring. To create a peach color, combine an equal amount of pink and green colors. Step 2 Dip each side of the cookie, into a different color, followed by sugar. Let the cookies dry overnight, on a baking sheet. Garnish with any small leaves you may have.
