Muffin-on-the-Run!


Yummy pre-event snack on the road
Ingredients:  
(Make 24 muffins, note that this batter has to stand overnight)
  • 2 Eggs
  • 15ml Bicarbonate of soda
  • 150g Soft Brown Sugar (1 cup)
  • 1 large Banana, chopped
  • 60ml Canola Oil
  • 1 cup Dates, chopped
  • 250ml (1 cup) BOKOMO OATS, pressed down into the cup
  • 5ml Cinnamon
  • 375ml Flour (1/2 cups), sifted before measuring
  • 500ml low fat Milk
  • 500ml Digestive bran (2 cups)
  • 5ml Vanilla essence
  • 2ml Salt
Method:

  1. Beat together eggs, sugar and oil.
  2. Add all the dry ingredients, grated apple and the sultanas.
  3. Mix thoroughly.
  4. Mix the milk and vanilla and add to the flour mixture.
  5. Stir until well blended
  6. Leave overnight in the fridge
  7. When ready to bake, stir and drop into muffin pans
  8. Bake at 180ยบ C for 15 minutes.
Note:  


  • This mixture can be kept in the fridge for up to 30 days.
  • Do not freeze the batter.
  • Baked muffins freeze very well.  
  • Post event option:  add peanut butter



Tip:  Vary your Oats by adding:

  1. Cinnamon & honey
  2. Cardamon
  3. Peanut Butter
  4. Swirl of yoghurt
  5. Fresh fruit - like a grated apple, sliced bananas or berry compote
  6. Chopped dried fruit
  7. Mixed nuts
