Summer would not be the same without one of my favourite foods, potato salad.
You will need:
- 6 large potatoes, cubed
- 4 hard-boiled eggs, chopped (Click here for a neat trick to make the perfect hard-boiled egg)
- 1/4 cup dill pickle relish or sweet relish
- 1-2 T minced onion
- 2 tablespoons prepared mustard
- 1 cup mayonnaise
- salt and pepper to taste
How to:
Bring a pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 6 minutes. Drain and rinse immediately with cold water to stop the cooking process.In a large bowl, combine the potatoes and eggs. In a separate bowl mix mayonnaise, mustard, dill relish, onion, salt and pepper. Add mayonnaise mixture to potatoes and eggs and mix gently. Add just a bit more mayo if the mixture seems to dry.
