You will need: (makes 20)
- 250g butter or margarine
- 250ml (1 cup) sugar
- 500g dates, chopped
- 1 egg, well beaten
- ½ cup green glace cherries
- ½ cup red glace cherries
- 200g (1 pack) Mariebeskuitjies broken into small pieces
- Coconut to sprinkle
- Grease a 26 x 16 cm cake tin
- Heat the butter or margarine and sugar over medium heat and stir until the sugar has melted.
- Reduce heat, add the dates and egg and mix quickly and thoroughly to evenly distribute egg
- Add the cherries and cookie pieces, mix and remove from the heat
- Pour the mixture into the prepared pan and press it firmly with the back of a glass.
- Sprinkle coconut over and let cool completely
- Cut into 3 x 6 cm fingers
