Ingredients:
- 1 large egg, beaten
- 1 cup buttermilk
- 1 1/2 lb boneless skinless chicken breast, cut into small chunks
- 2 cups panko bread crumbs
- 1 t garlic powder
- 1 t parsley
- 2 t Salt
- 1 t Pepper
- Olive Oil Spray
Combine egg, buttermilk and chicken pieces in a large ziplock and refrigerate for 1 hour.
Combine panko, garlic powder, parsley and salt and pepper in a bowl or pie pan.
Dip each chicken chunk in panko, let excess buttermilk drain off first.
Place on a baking sheet.
Heat oven to 400 degrees (or place baking sheet in freezer, transfer frozen chicken to large ziplock bag and save for future use).
Spray chicken pieces with olive oil spray to lightly coat. Bake in upper half of the oven for 15 minutes until golden, crispy and cooked through (25 minutes if frozen).
