Lemon Madeleines - a lovely tea cookie...

Here sits a lovely tea/dessert cookie...
it is moist, dense and yields a delightful lemon flavour too.

Lemon Madeleines (recipe courtesy- all recipes)

  • 4 eggs 
  • 1 cup white sugar 
  • 10 tablespoons unsalted butter (softened) 
  • 1 1/2 cups all-purpose flour 
  • 2 teaspoon baking powder 
  • 1/2 teaspoon vanilla extract 
  • 1 lemon, juiced and zested 
  • 2/3 cup confectioners' sugar for decoration 
How to:
  1. In a large bowl blend eggs and sugar add butter and blend well.
  2. On low speed, blend in flour, baking powder, lemon, vanilla. 
  3. Cover bowl with towel and let sit for one hour. 
  4. Preheat oven to 375 degrees and butter and flour madeleine molds. 
  5. Whisk batter then spoon into molds 3/4 full. 
  6. Bake 8-10 minutes. Remove from molds and cool. 
  7. Dust with confectioners' sugar... and Enjoy!
