- 1 large egg
- 30ml sugar
- 125ml milk
- 250ml flour
- pinch of salt
- 15ml melted butter / marge
- 20ml baking powder
Grease thick griddle, using Spray and Cook, or butter, and place over heat.
Beat egg in a bowl.
Gradually add sugar.
Add half the milk.
Sift in flour and salt.
Mix well, gradually adding remaining milk.
Add melted butter.
Stir in baking powder.
Mix well, but do not over beat, to ensure a light and fluffy crumpet.
Without disturbing the batter too much, drop spoonfuls of mixture onto griddle.
When bubbles appear on the top of the crumpets, they are ready to turn.
When both sides are browned, remove from heat and place on kitchen towel.
Serve warm with butter, and honey or syrup or jam
