Yummy pre-event snack on the road
Ingredients: (Make 24 muffins, note that this batter has to stand overnight)
- 2 Eggs
- 15ml Bicarbonate of soda
- 150g Soft Brown Sugar (1 cup)
- 1 large Banana, chopped
- 60ml Canola Oil
- 1 cup Dates, chopped
- 250ml (1 cup) BOKOMO OATS, pressed down into the cup
- 5ml Cinnamon
- 375ml Flour (1/2 cups), sifted before measuring
- 500ml low fat Milk
- 500ml Digestive bran (2 cups)
- 5ml Vanilla essence
- 2ml Salt
- Beat together eggs, sugar and oil.
- Add all the dry ingredients, grated apple and the sultanas.
- Mix thoroughly.
- Mix the milk and vanilla and add to the flour mixture.
- Stir until well blended
- Leave overnight in the fridge
- When ready to bake, stir and drop into muffin pans
- Bake at 180ยบ C for 15 minutes.
Note:
- This mixture can be kept in the fridge for up to 30 days.
- Do not freeze the batter.
- Baked muffins freeze very well.
- Post event option: add peanut butter
Tip: Vary your Oats by adding:
- Cinnamon & honey
- Cardamon
- Peanut Butter
- Swirl of yoghurt
- Fresh fruit - like a grated apple, sliced bananas or berry compote
- Chopped dried fruit
- Mixed nuts
