Banana Custard Nutella Pie

  • 2 1/2 cups graham cracker crumbs (~1.5 sleeves)
  • 1/3 cup sugar
  • 1/4 cup mashed banana (1/2 banana)
  • 1/4 cup (1/2 stick) unsalted butter, melted
How to:
  1. Blend graham crackers, sugar, butter, and banana in food processor
  2. Spread crust in a pie pan and let sit in the freezer for about 30min (preheat oven to 350)
  3. Bake crust in oven for ~15 min until it begins to brown and let cool
  4. Spread about 1/2 a jar of nutella on the bottom and sides of the crust and set in refrigerator until custard is ready
  • 3 cups whole milk
  • 8 large egg yolks
  • 2/3 cup sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1 vanilla bean or 1 teaspoon vanilla extract
How to:
  1. Combine all ingredients (except milk and vanilla) in a bowl, and whisk
  2. Heat milk and vanilla on medium heat until hot but not boiling
  3. Add 1 cup of hot milk to egg yolk mixture and whisk
  4. Add egg mixture back to the hot milk and bring the mixture just up to a bubble- it will thicken to a pudding consistency
  5. Remove from heat and let cool
  6. When cool, alternate the custard with layers of sliced bananas.
  7. Chill and serve
