Ingredients:
- 1 cup cherries (pitted and chopped)
- 1/2 cups sugar
- 1 cup heavy cream
- 1 cup milk
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate
- Heat the cherries and sugar in a small sauce pan until the sugar is dissolved and the cherries are tender, about 10 minutes.
- Heat the cream and milk in a sauce pan until it almost boils, about 5 minutes.
- Reduce the heat to low.
- Add one tablespoon of the cream mixture to the eggs to temper them.
- Add the egg mixture to the sauce pan.
- Cook at low heat until it thickens and can coat the back of a spoon.
- Remove from the heat and stir in the cherries and vanilla extract.
- Chill the mixture in the fridge.
- Start freezing according to the instructions for your ice cream machine.
- When the ice cream is almost done melt the chocolate and pour it into the ice cream in a thin stream.
