Sugar free Muffins Recipe (raspberry and banana muffins are my fav)
Ingredients:
- Mix - 2-3 eggs, 1 cup apple sauce, (process 2-3 grannysmith apples)
- 1/2 cup coconut milk/cream,
- 1/2 cup melted coconut oil or ghee,
- 1-2 carrots grated, 2 cups almond flour,
- (or a mix of flours eg waterchestnut, millett, sorghum, lupin, besan, cassava, amaranth, teff, coconut flour)
- 2 tspns baking pdr, 2 tspn baking soda, pinch seasalt.
- 1-2 T molasses, carob molasses or maple,
- 2 t vanilla, 2 tspns spice, or 1-2 Tblspn cinnamon.
TIP-top each muffin with an almond, walnut.
How to:
Bake in muffin tins, 40 mins -mod oven
Fruit flavour options - 1 -2 cup raspberries, 2 bananas
Cup of dates, prunes, raisins, apricots, pineapple, peach, cubed apple.
1 T grated lemon or orange zest, 1/3 cup cacao,
Nuts-1 cup walnuts, pecans, almonds
2 tspns ginger/cinnamon/mixed spice/coffee
Alternative savoury flavour
1/2 cup finely chopped spring onion/chives, capsicum, tomato, olives, goats cheese.
