Eggs Benedict Recipe
You will need:
Prepare the Hollandaise sauce using the recipe below.
To cook the other ingredients:
- 3/4 cup Hollandaise Sauce (recipe follows)
- 3 English muffins
- 6 small slices of ham
- 6 eggs
Prepare the Hollandaise sauce using the recipe below.
To cook the other ingredients:
Halve each English muffin and toast all six halves. Warm the ham slices in a frying pan. Poach the eggs.

Lay one slice of ham on top of each English muffin half. Top with a poached egg and slather with Hollandaise sauce.

How to:Melt the butter and heat to bubbling. Put everything else in a blender, cover and whip. Pour the hot butter through the opening in the top. Stop as soon as you’ve added all the butter.
- 1/2 cup of butter
- 3 egg yolks
- 2 tbsp lemon juice
- 1/4 teaspoon salt
- Tabasco sauce to taste (5 or 10 drops is good)
